In terms of the splash guards - I've never had this problem so can't give you any tips here. I'm not sure this would be included under warranty.
As for the engine noise - Hmmm, I think that's just general revving noise. It is a performance engine after all, and it can rev quite loudly at around 3500rpm in third and fourth gear (the rev band in first and second is quite low, so make sure not to over-rev the car in those gears). Also, as the car has only done 2000 miles I wouldn't give it the beans just yet. While the car is over its initial breaking-in period, I'd still watch the high revs for a while. Mind you, don't drive it like Miss Daisy either as the car still needs to bed-in.
The single biggest continual problem with the ST (as far as I'm concerned) is the tracking of the wheels. Keep a close eye on the tyres (front in particular) because if the tracking is off you'll notice your tyres disappear very quickly indeed. My front wheels are currently toeing in by 1 as my last set of tyres (had brand new tyres put on the car today) were badly worn on the inside edge. I'm going to keep a close eye on them.
The ST is a great little car. Very fun to drive (most of all on B-roads) and constantly brings a smile to my face. Enjoy it!
